WE ALL KNOW THAT MALUNGGAY IS GOOD FOR THE HEALTH. I WOKE UP YESTERDAY AND TURNED ON THE TV TO TELERADYO AND HEARD JOEY LINA SAYING GOODBYE ON HIS PROGRAM. SO HE'S LEAVING AND WELL I DO NOT KNOW HIM REALLY SO I WAS PLANNING TO TURN OFF THE TV WHEN HE STARTED TALKING ABOUT MALUNGGAY.

HE SAID (AND THIS WAS NOT NEW TO ME) HOW THIS HUMBLE TREE (IT IS A BIG TREE) POSSESSES ANTI-CANCER BENEFITS AND MANY OTHERS, FIBER AND VITAMINS. I BELIEVE HIM. SO THIS TIME I THOUGHT ABOUT USING SOME TO MY BREAD RECIPES. I BAKE A LOT OF BREADS, I TEACH BREADBAKING AS A PROFESSION, WHY CAN'T I COME UP WITH A MALUNGGAY BREAD? THE ISSUE HERE IS HOW TO GET RID OF THE MEDICINAL AFTERTASTE OF MALUNGGAY. SIMPLY CHOP THE MALUNGGAY, NOT TOO FINE SINCE YOU WILL ONLY RELEASE TOO MUCH OF ITS JUICE INTO THE DOUGH. IF YOU HAVE BEEN BAKING BREADS ALREADY, ADD THE CHOPPED MALUNGGAY AND GARLIC INTO THE DOUGH ONCE IT BECOMES SMOOTH AND ELASTIC, NEVER AT THE FIRST STAGE OR YOU WILL HAVE A HARD TIME MIXING IT.

HOW MUCH MALUNGGAY? FOR HALF A KILOGRAM, YOU CAN ADD 1/2 A CUP OF CHOPPED MALUNGGAY AND 1/4 CUP OF GARLIC. IF YOU LEAVE OUT THE GARLIC, YOU WILL BE SORRY, NO ONE WILL EAT THEM!!!!

THE GARLIC GIVES THE DOUGH A SAVORY FLAVOR SINCE YOU ARE NOT GOING TO USE MALUNGGAY IN A RECIPE OR FORMULA WITH EGGS, BUTTER AND LOTS OF SUGAR. THE DOUGH OF YOUR CHOICE SHOULD BE A LEAN ONE, FRENCH BREAD OR ITALIAN COUNTRY LOAF RECIPES, MEANING A RECIPE WITH HARDLY ANY SUGAR OR FAT AT ALL.

DOUGH WITH MALUNGGAY LEAVES AND GARLIC

THE MALUNGGAY LEAVES ARE NOW IN THE DOUGH, I USE A COMMERCIAL TYPE PLANETARY MIXER SO I HAVE NO PROBLEMS MIXING THE DOUGH. THIS DOUGH TAKES ABOUT 6 MINUTES TO MIX SINCE I USE A SPONGE AND DOUGH METHOD.

THE RECIPE IS SIMPLE;

500 GRAMS OF FIRST CLASS HARD WHEAT FLOUR
5 GRAMS OF YEAST, ANY KIND OF YEAST WILL DO, (INSTANT OR ACTIVE DRY)
SALT, 9 GRAMS
WATER, ABOUT 300-350 GRAMS OR MORE DEPENDING ON THE QUALITY OF FLOUR YOU ARE USING.

MIX ALL THE THESE AND ADD THE MALUNGGAY LEAVES AND GARLIC ONCE THE DOUGH BECOMES SMOOTH AND KEEP INCORPORATING THE LEAVES UNTIL ALL DOUGH IS COVERED.

DIVIDING THE DOUGH PLACE IN PANS

AFTER MIXING, YOU NEED TO DIVIDE THE DOUGH SO EVERY PORTION IS EQUALLY PROPORTIONED. THEY WILL BAKE ALL AT THE SAME TIME. YOU CAN SHAPE THE DOUGH INTO LOGS OR BAGUETTES, ROLLS, BRAIDS, OR LIKE THIS ONE ON TOP. I AM IN NEED OF A FLATBREAD THAT DAY SO I CHOSE A FLATTER BREAD. VERY EASY.

PROOF THE DOUGH IN A DRAFT FREE AREA UNTIL THEY DOUBLE OR TRIPLE IN SIZE. IF YOU WANT A SOFTER, FLUFFIER BREAD PROOF FOR ABOUT 3 HOURS OR SO (COOL WEATHER WILL DELAY PROOFING). IF YOU PLAN TO USE THIS DOUGH AS A PIZZA CRUST, THEN ROLL THINLY, TOP WITH YOUR FAVORITE TOPPINGS AND BAKE AT 550 F -500 F! THE HOTTER THE OVEN, THE BETTER!!!
